Black Walnut Carrot Cake

Shopping List:

For the cake:

  • 3 cups of shredded carrots
  • 1 1/4 cups of vegetable oil
  • 4 eggs
  • 1 tsp black walnut extract (optional)
  • 2 cups of granulated sugar
  • 2 cups of flour
  • 1 cup of chopped black walnuts
  • 1 tsp of vanilla extract
  • 1  tsp of cinnamon

For the glaze:

  • 1/2 cup of buttermilk
  • 1 cup powdered sugar
  • 1 tbs of honey
  • 1/2 tsp of baking soda. 
Steps:

For the cake:

  1. Mix together oil, sugar and eggs.

  2. Mix in vanilla, carrots, and optional black walnut extract.

  3. Mix in flour, cinnamon, and black walnuts.

  4. Bake at 350 degrees in well greased and floured bundt cake pan.

For the glaze:

  1. Wisk together buttermilk, powdered sugar, honey and baking soda.

  2. Spoon over still warm cake after you take it out of its baking pan.
